Peach Bourbon Cobbler

A simple cobbler recipe using frozen peaches and yes, Bourbon!

Ingredients

For the Fruit:

  • 2 16 oz. Bags of Frozen Peaches
  • 2 sticks unsalted butter
  • 1/2 cup granulated sugar
  • 1 pinch kosher salt
  • 1 pinch ground cinnamon
  • 2 tbsp Bourbon (we used Basil Hayden's)

For the Batter:

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 2 cups whole milk
  • 2 tsp baking powder

Instructions

  • Preheat oven to 350 degrees.
  • Melt butter in a 12-inch cast iron skillet over medium heat. Add peaches, sugar, salt, cinnamon, and Bourbon and cook until bubbly and peaches are soft.
  • In a separate bowl, combine dry ingredients and stir to combine. Add milk and mix well.
  • Pour batter over peaches and bake in preheated oven for approximately 30 minutes, or until toothpick comes clean and the edges are crisp and golden brown.
  • Best served warm, by itself, or with whipped cream or ice cream.
