I just got home from our summer vacation in South Carolina. It’s always so depressing when you get home, and that first couple of days back in reality is definitely the worst. It was an adjustment to all of our souls yesterday. I spent over a week with my husband and kids relaxing on the beach, riding bikes, and taking in all of the Southern food that I could handle. Southern BBQ? Check and Check. Lowcountry Boil? Check. Summer Cocktails? Check. One of my favorite things to eat at the beach is really kind of funny, because I never think to make it at home–Key Lime Pie. I can’t even begin to tell you how many different versions I tried. Some were definitely better than others. But now that I’m at home, I’m craving it and I am convinced there is no where good to get it here. Tonight we are grilling dinner to try and recapture some of our vacation vibes, and I thought an easy key lime recipe would be perfect. I have been scouring the internet all morning and there are SO many good recipes out there that I can’t choose. So this roundup of the best key lime recipes just had to happen!
Should I make a authentic key lime pie recipe? It’s definitely at the top of the list, but if it’s pie I really want it to turn out well because I have stuck in my mind a creamy and luxurious version that I ate in South Carolina. Maybe a twist on the original like key lime ice cream or key lime cupcakes? This is a hard decision, y’all.
I started off my search for a traditional Key Lime Pie recipe. I love having whipped cream on top of pie, so this recipe by Southern Bite really does look like the best key lime pie I could find. Even if I decide to make a different Key Lime dessert recipe, this pie is moving to the top of my must try list!
Along the lines of a pie, this Key Lime Crunch Tart by The Cafe Sucre Farine uses shortbread cookies and almonds in the crust. Yes, please!
I love a good cupcake and so do my kids. Although not totally Key Lime, these Coconut Cupcakes with Key Lime Frosting from Spoonful of Flavor seemed so tropical and beachy that they seem like a great addition to any summer party!
